Introduction

I know, it sounds really weird! I wanted to eat something post workout that tasted fresh and didn't involve animal protein. I was so surprised that how well the Avocado and the Cottage cheese come together. It's a great snack or lunch with blue corn tortilla chips or whatever else you would like.
It has a lot of potassium, but quite a bit of sodium. So if you can stand it, I would cut out the salt.

This recipe is all about modification as well. I just made it the way I would like it, feel free to experiment and tell me your ideas!

Number of Servings: 6

Ingredients

    3 Large Hass Avacados
    1/2 Large Tomato
    2 tbsp White Onion
    1 Jalapeno Pepper
    Cilantro
    1/4 c Cottage Cheese (non-fat)
    1 tsp Salt

Tips

If you are making this in advance for some reason, either add some lemon juice or leave the Avocado Pits in the bowl with the guacamole, it will help it stay fresh.


Directions

Combine avacados, tomato, onion, jalapeno, and cilantro. Use a knife or fork to mash everything together.

Add cottage cheese, stir.

Optional: Add salt

Serving Size: Makes 6 1/2-cup servings
