8 oz. ground (beef) chuck
4 oz. ground pork
4 oz. ground chicken or turkey
1 pkt. Lipton's Golden Onion recipe mix
1/2 cup shredded carrots
1 lg. egg
1/4 cup ketchup
2 T soy sauce
1/2 cup panko crumbs
4 pcs. bacon
You could also use ground lamb. I usually like ground chicken rather than turkey since I feel the chicken has more flavor, but either works as well.
The nutritional values for the dry soup mix are estimated, since the company lists 5 servings for the 2 envelopes in the box. One envelope is used for this recipe.
You could add more or different veggies, or none if you prefer.
The liquid mix should not make the loaves "soupy". I add just enough to make it sticky enough to hold together with the panko.
You could also use different starch instead of panko, such as bread crumbs, cracker crumbs, oatmeal flakes, etc. Your nutritional values will naturally vary with any changes.
Soften the shredded carrots by steaming or microwaving briefly, and mix into the meat combination.
Blend the egg, ketchup, and soy sauce well and pour into the meat mixture. Mix thoroughly.
Add the panko crumbs and blend in well.
Shape into a loaf (or two smaller).
Drape the top of the loaf with the bacon slices.
Roast, uncovered, for about an hour at 350-375 °F.
Internal temp should read about 140.
Allow to rest a few minutes before slicing.
