Ingredients

    225g Aubergine (sliced)
    171g Peppers (sliced)
    248g Onions (sliced)
    502g Potatoes (cut into equal size)
    10ozs Minced beef
    1 can Tomatoes (plus the juice)
    20g Tomatoe puree
    100g Greek yoghurt
    3 pats Butter
    1 tbsp Olive oil
    1 tspn Chille & garlic spice

Tips

Put the potatoes on to cook while you are sauteing the other vegetables.


Directions

Wash and prepare all the veg, slicing the aubergine, peppers and onions and cutting the potatoes into equal sizes.While the potatoes are cooking saute the other veg in 1 tbsp of olive oil.Keep these to one side while you brown the mince,draining any fat off.Add the canned tomatoes (chopped) and it's juice and the tomatoe puree and spices.Cook for 10 minutes for the flavours to combine.Into an ovenproof dish lay half of the aubergine,peppers and onions and then half of the mince, repeat with the other half of them all.Strain and mash the potatoes with the butter and greek yoghurt.Put the mashed potatoe on top of the dish and pop in the oven to heat through.
