    6 egg whites, room temperature
    1/2 tsp cream of tartar
    1/8 tsp salt
    1/4 cup sugar substitute
    2 tbsp granulated sugar
    1/2 cup sifted cake flour
    1/2 tsp vanilla extract
    1/8 tsp almond extract
    1/4-1/2 cup flaked sweetened coconut, optional


1. Preheat oven: 325 degrees. Position rack in center of oven.
2. Beat egg whites until foamy. Add cream of tartar and salt. Beat until soft peaks form.
3. Gradually add sugars, 2 tbsp at a time, until soft peaks form.
4. Sprinkle flour. Gently fold in until combined. Fold in extracts.
5. Pour batter into 9x9 pan or springform pan. Sprinkle coconut.
6. Bake 25-30 minutes, until toothpick inserted into center comes clean. Cool 40 minutes in pan. Remove.
