This is a low-fat version of a restaurant classic! This is a low-fat version of a restaurant classic!
Number of Servings: 8


    4 Skinless chicken breasts (about 1 pound), cooked and shredded
    1 can Ro-Tel, drained
    1 can 98% fat free Cream of Chicken soup
    1 Cup Fat Free shredded cheddar
    1 Cup fat free shredded mozzarella
    16 corn tortillas
    1 16 oz. container sour cream (2 cups)
    1 can skim evaporated milk


Preheat oven to 350 degrees.

Combine chicken, soup, Ro-Tel, cheeses, and 1/2 can of milk. Spoon in equal amounts into tortillas and roll. Place tortillas seam side down in baking dish.

Combine remaining milk and sour cream. Pour over tortillas. Bake at 350 degrees for 20-25 minutes.

Serving size: 2 tortillas, Yields 8 servings.
