Ingredients

    Chicken Breast, no skin, 1 breast, bone and skin removed (remove)
    *Silver Goat Garlic & Herb Goat Cheese, 3 oz (remove)
    Pineapple, fresh, .5 cup, diced (remove)
    Salt, 2 tsp (remove)
    Pepper, black, 2 tsp (remove)
    Thyme, ground, 1 tsp (remove)
    Sage, ground, 1 tsp (remove)
    Rosemary, dried, 1 tsp (remove)
    Garlic, 6 cloves (remove)
    Onions, raw, .5 medium (2-1/2" dia) (remove)

Directions

rinse & dry 2 chicken breast halves (no skin), pound out to even thickness
Mix goat cheese & chopped pineapple / seperate salt pepper & herbs in half - half for chicken & half for onions & garlic
season chicken & spread goat cheese on breast, roll up & season outside. spary a baking dish with canola spray. Place breasts in dish.
Chop onion & garlic (season with remaining half of s&p and herbs). Add to baking dish.
Bake at 400 degrees for 20-25 minutes
