Ingredients

    2 cups cooked bulghur wheat
    1 medium tomato, diced
    1/2 cup minced parsley
    1/2 can organic garbanzos
    2 small shallots minced or 1/2 small red onion, minced
    2 tablespoons white wine vinegar
    3 tablespoon extra virgin olive oil

Tips

You can add more vinegar or salt and pepper to taste. This recipe lends itself to variation. If you aren't vegan you can sprinkle with feta at serving.


Directions

Cook bulghur and drain well. Add all the chopped ingredients, oil and vinegar and stir well.

Serving Size: Roughly 6 1/2 cup servings.
