Ingredients

    1 lb. ground beef
1 can green chile enchilada sauce
1 can mild red enchilada sauce
    15 flour tortillas
    3 cups mexican cheese blend.

Directions

Brown the ground beef in a skillet. Add taco seasonings, chopped jalapeños, salt, and pepper, if desired. Drain off fat. In a 13x9 inch baking dish, spread the entire can of green chile sauce over the bottom. Add 1/16 of the meat and a sprinkle of cheese to each tortilla, roll up, and place in the dish. Spread the entire can of red enchilada sauce over the top, making sure to coat each enchilada well. Sprinkle the remaining cheese on top. Cover tightly with aluminum foil and bake in a 350° oven for 10-20 minutes, just until the cheese bubbles and melts. Makes 15, one-enchilada servings.
