Ingredients

    1 lb russet potatoes, peeled and cut (about 4 medium/large)
    5 Tbsp butter
    1/4 C shredded cheddar cheese
    3 Tbsp light sour cream
    1/2 pound sliced mushrooms (about 10 large)
    1 medium carrot, sliced
    1 lb lean ground beef
    1 onion small/medium, chopped
    4 garlic cloves, minced
    2 Tbsp flour
    1 C beef gravy (can or dry mix are fine)
    1/4 C fresh parsley, copped
    1/2 C frozen peas
    2 or 3 Tbsp Worcestershire sauce
    1/2 tsp marjoram or oregano

Tips

If you prefer you can sprinkle the cheese on top of the mashed potatoes instead of mixing it in.

If you have left over mashed potatoes or want to use instant mashed potatoes then it takes about 2 cups worth.


Directions

Boil potatoes in large saucepan until tender. Drain potatoes then add 3 Tbsp of the butter, cheddar cheese, and sour cream. Mash and add salt and pepper to taste.

Preheat oven at 350. In a large skillet add the remaining butter, mushrooms, and carrots. Saute for about 7 minutes. Remove mushrooms and carrots from skillet into a bowl. Put beef, onions, and garlic in the skillet. Cook over medium high heat till hamburger is browned. Add flour and stir 2 minutes. Except for the mashed potatoes- add all remaining ingredients to the skillet, simmer for 5 minutes.

Put the beef mixture into a baking dish (8x8 is a good size). Spoon mashed potatoes over the top of the beef mixture. Smooth the potatoes out a little bit then bake for 25 minutes or until potatoes are golden. Let stand for 5 minutes before serving.
