Number of Servings: 6

Ingredients

    1 can black beans (drained and rinsed)
    1 can kidney beans (drained and rinsed)
    1 can navy beans (drained and rinsed)
    2 cans rotel (not drained)
    1/2 pound of ground beef (90% sirloin)
    1 onion, chopped
    1 green pepper, chopped
    2 garlic cloves, minced
    1 packet of your favorite chili seasoning (or make your own).

Tips

Enjoy with light sour cream and reduced fat shredded cheddar cheese. If I have enough calories left for the day, I really like this served with Stacy's Naked Parmesean Pita Chips. YUM!


Directions

Heat 1 TBS of olive oil in a large pot or dutch oven. When heated, put in chopped onions and green peppers. Cook until soft. Make a well in the middle, add chopped garlic cloves, and cook until fragrant. Mix garlic in with the rest of the vegetables. Place vegetables in a bowl and set aside. Add remaining olive oil to pan and heat until shimmering. Add beef and cook until browned. Drain off any fat or liquids. Add back the vegetables and the rest of the remaining ingredients to the pot. Simmer for 20-30 minutes.

Serving Size: Makes six supper or eight lunch portions.
