Introduction

Ingredients

1/2 cup unbleached white flour
1/2 cup whole wheat pastry flour
1/4 tsp baking soda
1/4 cup applesauce
1/3 cup truvia
1/3 cup unsweetened cocoa powder
1/4 cup sucanat
1/4 cup unsweetened almond milk + 1 tsp lemon juice mixed to make "buttermilk"
1 tsp vanilla
Directions
Combine flours and baking soda in small bowl. Stir together applesauce, truvia, cocoa and sucanat until well mixed. Add "buttermilk" and vanilla and mix well. Stir in flour mixture until combined.
Cover and refrigerate for one hour. (dough will be stiff)
Preheat oven to 350F. Lightly spray cookie sheets with nonstick cooking spray or line with parchment paper. Drop dough by rounded teaspoonfuls onto cookie sheets.
Bake 10 to 100 minutes or until edges are firm. Cool 2 minutes on cookie sheets. Remove to wire racks to cool completely.
If you want, dust with powdered sugar before serving (not included in nutrition info).
