Ingredients

    8 oz enoki mushroom, fresh, sliced
    8 oz shiitake mushroom, fresh, sliced
    6 medium carrots, sliced thin
    1 small celery heart, sliced thin
    1 large onion, chopped
    10 green onions, chopped, whole stalks
    1 bunch fresh spinach, torn
    1 bunch fresh watercress, chopped
    2 leeks, white and light green only, sliced
    2 cups fresh brussel sprouts, quartered
    1/4 cup fresh cilantro, chopped
    4 cloves garlic, minced
    2 cups chicken or vegetable broth
    3 cups water

Directions

Combine all ingredients in a soup pot and boil until tender. Add salt and pepper to taste at the table. Makes 6 HUGE 3-cup servings.

Lots of food, lots of flavor, all the good stuff and none of the guilt.
