Ingredients

    2 tsp canola oil
    1 pound lean beef round
    2 cups chopped onion
    1 can sliced potatoes
    1 can whole kernel corn
    1 can peas
    1 can green beans
    1 can sliced carrots
    2 cans diced tomatoes
    1 small can tomato paste
    1/2 yellow pepper, chopped
    1/2 red pepper, chopped
    5 ribs celery
    4 cups fat-free beef broth
    1/4 cup dried parsley
    3 bay leaves
    1 tsp dried basil
    2 tsp dried thyme
    2 Tbsp kosher salt

Tips

Made as concentrate--need to add water to frozen when reheating. Frozen in large muffin tins.


Directions

Cut beef into bite-size pieces. Brown in oil and then drain. Add onions to pan and cook until translucent. Add everything to crock pot and cook on low all day.



Serving Size: 1 serving = 1 cup plus water
