Introduction

This is an update on a pierogi casserole recipe I found. I replaced the potatoes with sweet potatoes and used a lighter cheese to up the health benefits. Then I added sauce and cheese for a little more flavor. I also lowered the carbs by cutting down the number of noodles by more than half. This is an update on a pierogi casserole recipe I found. Ingredients

    1 package steam n mash sweet potatoes
    1 container Philadelphia light Italian herb and cheese cooking creme
    1 egg white
    Salt, pepper
    1 jar light classico alfredo
    6 slices muenster

Directions

Cook sweet potatoes according to package directions. Mash with cooking creme, egg, salt, and pepper. They mash pretty easily - I did it with a fork - but you can use a hand mixer. Pour half of mixture into bottom of 13 x 9 pan. Layer with four noodles. Top with remaining mixture and other five noodles. Pour entire jar of sauce over top. Bake at 350 for 20 minutes. Add cheese and bake another 10.

    This looks very interesting and potatoes and cheese can never be bad. You forgot to write the Barilla No-cook lasagna noodles in the ingredient list. They are in your nutritional list so I found out what you meant...Question is can you eat just one square? mm - 3/26/12
