This is a slow cooker recipe with little prep time and lots of flavour. This soup could serve as a meal with the addition of a slice of (vegan) bread. Ingredients

1.5lbs peeled, chopped carrots
1.5lbs peeled, chopped yams
1 medium peeled, chopped onion
1c red lentils
1L (4 cups) organic, low sodium, vegetable broth
2tsp freshly grated ginger root
2tsp ground curry powder
1 14oz can organic, Light, coconut MILK
Tips
If you like texture bits in your soup, ladle out some of the lentils & vegetables before blending. Add them back in with the coconut milk.
Directions
Add everything but the coconut milk to the slow cooker in layers ~ onions, carrots, yams, lentils, ginger, curry powder, broth. Cover & cook on Low setting for 6-8hours.
Check the doneness of the lentils before proceeding further. When lentils are cooked, use a hand mixer/blender to puree ingredients, right in the slow cooker. When blended to the consistency you prefer (some like a bit of texture), add coconut milk & mix well. Turn slow cooker to Warm setting to allow the coconut milk to warm up & blend with all of the other flavours. Stir well & serve.
Serving Size: Makes 6x277 calorie servings.
