A healthy choice for a breakfast scramble that makes you feel like your cheating. A healthy choice for a breakfast scramble that makes you feel like your cheating.
Number of Servings: 4


    - 1/2 package of Hillshire Farms Turkey Polska Kielbasa
    - 1/2 of a raw potatoe
    - 1 tbsp butter
    - 1 tspn olive oil
    - 1/4 of a fresh jalapeno
    - 1 tspn chopped garlic
    - 3 eggs scrambled in a bowl
    - 3 green onions chopped
    - 1/4 cup shredded mexican cheese


Chop up Kielbasa, potatoe, onion and jalapeno and keep seperate.

Heat a skillet and melt the butter and oil together. Add potatoes to hot pan. Cook for 1 minute then add jalapenos and garlic. Cook for 1 more minute and add Kielbasa. Stir occassionally. Once potatoes are cooked, add raw egg mixture and lightly stir till eggs are cooked. Once eggs are done, turn off the heat, fold in green onions. Sprinkle cheese on top and cover for 1 minute. Serve in bowls and enjoy.

Note: If you would like it spicier, you can add more jalapeno. Not suggested for young kids unless they really like spicy foods.
