Ingredients

    2/3 c. rolled oats (not instant)
    1/4 c. wheat germ
    1 cup crispy brown rice cereal
    1/2 c. powdered nonfat milk
    2 scoops vanilla protein powder (25g protein/scoop)
    1/4 c. slivered almonds roughly chopped (or any nut such as walnut, macadamia, erc.)
    8 squares Simply Lite Sugar Free Dark Chocolate, chopped
    1/4 c. dried fruit (raisins, cranberries, blueberries, etc.)
    1/2 tsp. salt
    1/2 tsp. cinnamon
    1/4 c. applesauce, unsweetened (or any fruit purée such as banana)
    2 egg whites
    3 tbsp. Xylitol
    1 tsp. pure vanilla extract

Directions

Mix first 10 ingredients (oats through cinnamon) in a medium bowl; set aside. Mix remaining ingredients together in a small bowl until thoroughly combined. Add wet mixture to oat mixture and stir until just combined. Press into 9x9 inch pan that has been lined with aluminum foil and greased with nonstick spray. Bake in a preheated 300 degree oven for 20-25 minutes until edges are brown. Lift bars out of pan using foil; cool completely. Cut into 8 bars.
