Ingredients

1 stick butter
3/4 cup smooth, natural peanut butter
3 eggs
1/2 cup splenda
1 tsp. vanilla
Pinch of salt
1/2 tsp. baking powder
1/2 cup coconut flour
Tips
For a less traditional and higher protein cookie, replace the coconut flour with whey protein.
Directions
Heat the oven to 350
Cream together the butter, peanut butter, eggs, and splenda with an electric mixer. Add the remaining ingredients and combine thoroughly.
Dish out by heaping teaspoons onto 2 parchment lined cookie sheets. Bake for 8-10 minutes or firm and golden brown.
