Introduction

A pure, just crab, cake, held together with just a bit of egg and mayo A pure, just crab, cake, held together with just a bit of egg and mayo

Ingredients

    Crab meat, canned, 16 oz
    Egg, fresh, 1 large
    Worcestershire Sauce, Lea & Perrins, 2 tsp
    Tabasco Sauce, 1 tsp
    Lime Juice, 1 Tbsp
    Pepper, red or cayenne, 1/4 tsp
    Tarragon, 1 tsp
    Mayo, Smart Balance Omega 3, light, 3 Tbsp

Directions

Mix egg, mayo and seasonings together. Gently stir in crab. Spray a foil covered cookie sheet with non stick spray, Scoop out 1/4 cup of the mix and dollop onto the cookie sheet. Broil for 7 minutes until browned on the high spots and egg has set.

    If you check the carbs on a jar of regular mayo you will see there is less than the light mayo. - 2/20/09

    Very easy and were so good. I actually used Jumbo Lump crab meat instead and they were very good. Finally a crab cake without all the forbidden carbs! Thanks - 10/23/08

    Next time will try different seasoning and perhaps pan cooking since didn't brown well. Used egg sub since wasn't making a whole recipe and cut back on mayo but added some mustard. Held together pretty well and since only for me it isn't an issue. - 5/25/11

    I threw in a bit of Old Bay seasoning instead of the cajun to give it that real Maryland crab cake flavor. I couldn't believe how good they came out. - 3/16/11

    I tried this variation using gluten flour as a binder and chia seeds for crunch. It turned out crunchy and tasty. This is a low carb solution to a great tasting dish. - 3/11/11
