Introduction

Number of Servings: 4

Ingredients

    3c. fat free low sodium chicken broth
    6oz cooked lean, low sodium ham, diced
    1 (15 1/2oz) can navy beans, rinsed and drained
    1 carrot, shredded
    1 stalk celery, very thin sliced
    1/2 c diced red bell pepper
    1/2c chopped onion
    2 Tblsp dried parsley

Directions

Combine all the ingredients except the parsley in a medium saucepan, cover and bring to a boil. Reduce heat and simmer, covered, until the vegetables are tender, about 5 minutes. Stir in the parsley just before serving.
