Ingredients

    2 tbsp urad dal (split black bean)
    2 tbsp chana dal (split garbanzo bean)
    1 tbsp fenugreek/methi seeds
    1 tbsp cumin seeds
    1 tbsp coriander seeds
    2 tbsp paprika, ground
    30 whole black peppercorns
    1 1/2 tbsp mustard seeds
    2 tbsp turmeric, ground

Tips

Use a coffee grinder dedicated for spices only! Your coffee will taste very spicy if you don't!


Directions

Combine all whole spices in a dry skillet and heat on high until seeds turn dark and mustard pops (5 to 10 minutes).
Transfer to a dish to cool (seeds will continue to cook while still in pan).
After seeds cool, place 2 tbsp into a spice grinder or a coffee grinder (see tip). Grind until powdered. Continue grinding until all seeds are ground. Add powdered spices. Mix well. Seal in an airtight container.
