Ingredients

1 cup (dry) Quinoa
.5 cup (dry) black rice
1/8 cup pumpkin seeds
1/4 cup sunflower seeds
1 tsp canola oil
1 cup mushrooms diced
1 cup cucumber diced
1 red pepper diced
1/2 cup red onion diced
1 cup parsley chopped
18 ounces of skinless chicken breast
Dressing:
1/8 cup olive oil
juice of 2 lemons
2 cloves of garlic chopped
1/4 cup of fresh mint chopped fine
2 tbsp of rice vinegar
Tips
Can be vegetarian dish without chicken - I sometimes use firm tofu instead of chicken.
Directions
cook quinoa and rice separately and let cool. Fry chicken in non-stick pan and set aside. Add diced mushrooms to pan with canola oil and fry until golden.
Mix diced vegetables, seeds, cooled quinoa and rice, mushrooms and parsley in large bowl. Top with Chicken. Add dressing just before serving.
