Found the original recipe on Pinterest, but I added a couple o. It tastes like fried cheesecake, smear on some natural peanut butter, roll up the little circles add some sugar-free syrup and you have a delicate Saturday morning breakfast that you can share with pride.     Ingredients:

    2 oz cream cheese
    2 eggs
    1 packet stevia sweetener
    1/2 teaspoon cinnamon (optional)
    1/4 teaspoon nutmeg (optional)


Tips

I started to roll these up to make crepes. My family really thought they were getting a treat and wondered if they were sabotaging my "diet" with their visit. haha.


Directions

Put all ingredients in a blender or magic bullet. Blend until smooth. Let rest for 2 minutes so the bubbles can settle. Pour 1/4 of the batter into a hot pan greased with butter or pam spray. Cook for 2 minutes until golden, flip and cook 1 minute on the other side. Repeat with the rest of the batter.

Serving Size: makes 4 six inch pancakes
