Ingredients

3/4 cup Sugar
1/2 cup Plain greek yogurt
1/4 cup unsweetened applesauce
2 eggs 1 tsp vanilla extract
1 1/2 cups fresh blueberries
2 cups of flour
2 tsp baking soda
1/2 teaspoon salt
Tips
I put half in a ziploc bag and put them in the freezer. I take one out the night before I want to eat them. My toddler loves them too! So good for them.
Although the recipe calls for fresh blueberries, you can add frozen too. Add them to the batter frozen but be careful not to stir too much or the batter will turn purple. When using forzen berries, you'll have to bake the muffins 3 to 5 minutes longer.
Directions
Preheat the oven to 375. Lightly grease 12 muffins cups. (I use pam) In a large bowl, mix the sugar, yogurt applesauce, eggs and vanilla. In a small bowl, combine the flour, baking soda, and salt. Blend wet ingredients and dry ingredients together. Fold in the blueberries. Spoon batter into prepared muffin cups. I used a icecream scoop. Bake 18-20 minutes until lightly golden brown or a cake tester inserted in center comes out clean. Romove from pan and cool on rack.
