Ingredients

1 cup Quinoa, dry
2 cups red kidney beans
I/2 red onion, minced
2 stalks celery, minced
1 green bell pepper, minced
1/2 cup salsa
1/4 cup olive oil
1/2 cup cider vinegar
1 tsp ground cumin
1 tsp ground oregano
Tips
You could use other (and more) vegetables; this is just what I had in the house.
Directions
Rinse quinoa and boil in 2 cups of water. Once it is cooked, combine it with the kidney beans, onion, celery, bell pepper and salsa. In a small bowl, whisk together the olive oil, vinegar and spices. Pour over the quinoa mixture and stir well. Chill before serving.
