Burritos- made by Engine 2 Diet standards (no meat or animal products, no oil, no processed foods, no sugar). Very tasty... even my 5 year old loved them. Ingredients

1 package Morning Star Meal Starters Crumbles
1 can of Mexican Corn (without beans, drained)
1 can black beans (rinsed and drained)
1 can of Rotel Tomatoes and Green Chilies
1 packet taco seasoning
1 avocado (skin and seeds removed, mashed)
Juice of 1 wedge of lemon and lime
1/4 tsp Tony's Creole Seasoning
8 whole wheat tortillas (check the label!)
2 cups fresh spinach
1 cup salsa
Tips
To keep it within the Engine 2 Diet, be sure to read labels to avoid oils, sugar, and "whole wheat" that isn't up to par.
Directions
In a large skillet, heat first 5 ingredients until hot throughout and a good thick burrito filling consistency. Mash one avocado with juices and seasoning.
Roll up each tortilla with a little of the "easy guac", a generous helping of burrito filling, spinach, and some salsa. (We used about 3 or 4 leaves of spinach and about a tbsp of salsa.)
Serving Size: Makes 8 burritos
