Ingredients

    1 zucchini, halved and sliced
    1 beefsteak tomato, sliced into 3/4" wedges
    1 jalapeno, seeded and chopped
    1/2 cup shelled edamame, cooked and chilled
    chopped fresh basil to taste
    salt and pepper to taste

Directions

prepare vegetables as noted, put in bowl and toss with basil, salt, and pepper. serve over spinach or as a side with chicken
