Ingredients

    1/2 cup ripe banana
    3/4 cup egg whites
    1/2 plain greek yogurt
    3/4 cup oats
    2 scoops vanilla protein powder
    stevia to taste
    1 tsp baking powder
    1 tsp baking soda
    1/2 tsp cinnamon

Directions

preheat oven to 350 degrees. combine all ingredients in blender, blend until smooth. Fill foil liners with batter, bake for 15-18 minutes until toothpick comes out clean.

Serving Size: makes 12 regular muffins

    Good flavor (added a squirt of honey), but light and sort of not-much-there. All egg white, they rise in the oven like a souflee and then fall. I wonder if there's a way to make them a bit more substantial without adding too many calories. - 7/17/13

    Substituted chocolate protein powder and added some dark chocolate shavings. Taste was a little bland, would add more bananas and stevia next time to sweeten it up a bit. - 6/24/13
