Introduction
A traditional Italian Easter cake. I got this recipe from my cousin in Italy last year when I was there on a visit.It calls for a packet of PaneAngeli, but I have substituted it with 3 tbs. baking powder. If you can find the PaneAngeli, it is much better. This cake was made in a bunny pan and decorated for Easter, but it can made in a round or loaf pan. A traditional Italian Easter cake. Ingredients

3 Egg Whites
1/2 cup Margarine (or butter)
1 cup Sugar
2 1/2 cups White flour
1 cup Milk
1/4 cup Orange Juice
1 tbsp. Orange Extract
3 tbsp. Baking Powder or 1 package PaneAngeli
1/2 cup Mini Chocolate Chips
1/2 tsp. Salt
Tips
You can substitute the orange juice and orange flavoring for almond flavoring and amaretto.
Remember - use either the PaneAngeli or baking powder. Do not use both. Cooking time may vary.
Directions
Separate eggs and beat in a separate bowl. Put aside. Beat margarine and sugar. Add orange juice, milk and flavoring (if using PaneAngeli, add now). Mix well.
Add flour, baking powder, salt and egg whites. Mix together until well blended. Add chocolate chips. Put batter in greased pan for baking.
Serving Size: 14-16 slices
