Ingredients

    Low Carb Tortilla Shells (8)
    Chicken Breast
    Refried Beans, fat-free
    Spanish Rice
    Shredded Cheese
    Green and Red Peppers
    Onion
    Enchilada Sauce

Directions

Cut up and cook chicken breast, saute peppers and onions. Layer into a 9x13 pan creating your own layers. Pour enchilada sauce on top. Bake at 375 for 20 minutes.
