Ingredients

    1 1/4 cup flour
    1/2 cup pastry flour
    1/4 cup Splenda
    1/4 cup sugar
    1 1/2 tsp baking powder
    1/2 tsp salt
    3/4 cup unsweetened vanilla almond milk
    2 Tbsp I can't believe it's not butter light, melted
    1 Tbsp unsalted butter, melted
    2 egg whites
    1/2 cup sugar free strawberry jam
    1/4 cup semi sweet chocolate chips

Directions

1. Preheat oven to 400. Line a muffin tin with paper liners and set aside.

2. In a medium bowl, combine the flours, sugar, Splenda, baking powder and salt and mix well. Make a well in the center. In a small bowl, combine the milk, butters and egg whites and mix well.

3. Slowly add the flour mixture to the milk mixture, taking time to mix between each addition. Do not overmix.

4. Evenly spoon batter into prepared muffin pan, filling cups 1/4 full. Spoon 2 tsp jam into the center of each. Mix chocolate chips into the remaining batter and top off the muffins, filling each about 3/4 full.

4. Bake 20 - 22 minutes or until muffins spring back with lightly touched in the center. Remove from oven and allow to cool in pan 5 minutes. Remove from pan and cool completely on a wire rack.
