Ingredients

1.5 Cups Whole Wheat Flour
1.5 Cups Almond Meal (Ground Almonds)
2 Cups Splenda (NOT sugar blend)
2 Tbsp Baking Powder
1 Tspn Baking Soda
2 Tspn Cinnamon
1/2 Tspn Salt
2/3 Cup Canola Oil
3/4 Cup Unsweetened Soy Milk
2 Tspns Vanilla Extract
1 Cup diced Apples (2 small to medium bananas)
Tips
With left over batter, I usually can make 9-12 small cookies. They also make great moist cookies!!!

Preheat the oven to 350 degrees F.
In a large bowl, combine Flour, Sugar, Baking Powder, Baking Soda, and Salt. Stir to combine dry ingredients. In another medium bowl combine Oil, Milk, Vanilla, and Diced Apples. Add Wet ingredients to Dry ingredients and mix until combined.
Using teaspoon or small cookie scoop fill each mini muffin tray.
Bake 10-15 minutes rotating trays half way through. Or until tops are golden brown.
