Ingredients

1/4 cup honey
1/6 cup (8 teaspoons) Dijon or spicy brown mustard
1/2 Tablespoon curry powder
3 tablespoons I Can't Believe Its Not Butter, melted
1/4 teaspoon pepper
Dash ground cayenne pepper
2 split chicken breast halves, bone-in, skin removed or left on
Directions
Clean chicken and pat dry
Mix the honey, mustard, curry powder, butter, and peppers; blend well
Use an oven save (prefer glass) bake pan. Spray light cooking spray. Coat the chicken with marinade, place skin side up, cover pan tightly with foil, and refrigerate for2 hours
Preheat oven 375 degrees
Bake the chicken (covered with the foil) for 45 minutes. Then remove foil, baste the chicken with its own juices, and continue cooking uncovered for 30 minutes longer, basting every 10 to 15 minutes.
