Ingredients

1 Large Can Crushed Tomatoes (about 14oz)
3 Cups Chicken or Vegetable Stock (depending on if you're vegetarian or what you have handy!)
1 Handful of fresh Basil Leaves, Stems reserved (about 15 leaves)
1/2 Cup 1% Milk (optional)

Tips
Tying your Basil stems together with butchers twine makes for easy removal or you could put them in cheesecloth.
Directions
1. Add Canned Crushed Tomatoes to a medium sized pot and Basil Stems (do not add leaves at this point).
2. Once Bubbly add your stock and let it simmer gently for about 10 minutes.
3. Remove your basil stems and add your basil leaves and puree, if you do not have a hand blender you can chop up the basil.
4. Add your Milk. Heat through, season with salt and pepper and eat!
You could definately add onion, caramelized onion, other herbs such as thyme, oregano and parsley. If this is a main course adding soaked chickpeas or lentils would help bulk it up. Adding other vegetables are also a great idea, Carrots, Leeks, Broccoli, Celery. Spinach or other greens! Wilted Arugula would add a nice texture and peppery-ness! Have Low-fat Sour cream? a nice dollop would make it creamier and delicious!!
