Number of Servings: 10

Ingredients

    Cake
    2 eggs
    1 1/2 cup Brown Sugar
    2 cups Pear Juice or Nectar (Milk works fine too)
    3 Bosc Pears Peeled and Diced and Sauteed till Tender
    2 cups Flour
    2 tsp Baking Soda

    Caramel
    3/4 cup Brown Sugar
    1/2 cup Cream, Heavy
    1/2 Butter, unsalted

Directions

1. Preheat oven to 350.

2. Beat the eggs with the sugar till almost fully dissolved. Add the juice and combine well.

3. Fold in flour and baking soda.

4. Pour into a greased Springform Pan or pan of similar size. Bake until a toothpick comes out clean. About 45-50 minutes.

5. When the cake comes out poke holes in it with a fork.

6. Melt the butter with the sugar and add the cream and simmer gently until the sugar has dissolved and it looks like caramel.

7. Pour the hot caramel over the hot cake and the cake will soak it up.

Serving Size: Makes 1 Round Springform Pan (8-10 slices)
