Ingredients

    2 sticks of Earth Balance Vegan Buttery Spread
    1 1/2 Cups Sugar
    2 Eggs
    1 tsp almond extract
    2 1/4 Cups Flour
    1 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt

    1/2 Cup sugar
    Zest from 3 lemons

Tips

I think a little additional extract or lemon oil might up the flavor and cover that Earth Balance fake butter flavor, but these came out really yummy!


Directions

Preheat oven to 350 degrees F. Mix the extra sugar and lemon zest in a separate bowl. Cream the "butter" and sugar. Add eggs and almond extract. Mix. Add dry ingredients. Mix. If it seems too sticky, add a little more flour. This dough will be more like chocolate chip dough and less like snicker doodle dough - meaning it is sticker. Drop the batter on the ungreased cookie sheets. Generously sprinkle the lemon sugar mixture. Bake for 8 to 10 minutes. Let cool on racks.
