Ingredients

    2 boxes Zatarain's Jambalaya with Cheese rice mix
    2 can's Rotel mild Diced Tomatoes & Greeen Chilies
    2 medium bell peppers
    1.5 medium bonless skinless chicken breast
    taco seasoning to taste
    garlic salt to taste
    ground black pepper to taste

Directions

Dice chicken breast. Season dicec chicken with taco seasoning, garlic salt, & ground black pepper to taste. Brown seasoned diced chicken until cooked through. Drain excess fluids off of chicken. Set aside. Dice bell peppers and set aside. Prepare Zatarain's Jambalya with Cheese rice mix per the directions on the package. Remember to double everything since you have 2 boxes. Once mix comes to a boil, as it says on the box, add chicken, bell peppers, and rotel. Return to boil. Reduce heat & allow to simmer until rice is cooked and most of the liquid is absorbed. Allow it to cool, then serve & enjoy.
