Ingredients

    1 6-inch Hoagie Roll
    4oz piece or pieces of chicken breast
    1 oz of shredded mozzarella (or other low-fat cheese)
    1/4 cup of spaghetti sauce

Directions

Preheat a non-stick skillet or griddle to 350 degrees. While that's heating, cut the chicken into strips about 1/2 to 3/4 inch wide. Season the chicken with pepper and salt (other seasonings would be great here too). Place the chicken on the skillet or griddle leaving enough room for the sub roll. Place the cut side of roll down on the skillet or griddle. After about 3 or 4 minutes, turn the chicken over to cook the other side and check the roll for browning. Remove the roll when it's toasted to the color you like. Place about half of the spaghetti sauce on each half of the roll. When the chicken is done, place the chicken on the bottom roll half. Now, sprinkle the cheese over each half and place each half back in the skillet or griddle with the cheese facing up and turn the heat down. Cover with a piece of aluminum foil or a lid and give it about 3 to 5 minutes to melt the cheese a little. Enjoy
