Introduction

Ingredients

    6 oz lean pork chops
    .25 c soy sauce (reduced sodium)
    1 ounce dry sherry
    1 tsp ginger (fresh or powdered)
    2 cloves garlic
    .5 yellow bell pepper
    .5 red bell pepper
    1.5 cups broccoli
    2 medium carrots
    .5 medium onion
    2 tsp cornstarch dissolved in water
    Sriracha hot pepper sauce (optional!)

Directions

Slice pork into thin strips and marinate in soy, sherry, ginger and garlic.
While meat is marinating, healthy saute veggies in pam and water, then set aside.
In same skillet, cook pork strips until nearly done, then add the rest of the marinade juices. Cook for one minute more. Return veggies to skillet to combine with pork and liquid. Then add cornstarch mixture to thicken sauce.
Serve over a bed of rice.
We like to add a tablespoon of sriracha hot pepper sauce right at the end to make it extra spicy.
