Introduction

Ingredients

    3 Tbsp Olive Oil
    3 Garlic cloves crushed and sauteed
    1/2 red bell pepper finely chopped
    3 fluid ounces red wine
    1 cup fresh mushrooms sliced
    8 medium sized tomatoes chopped
    1 can tomato sauce 15 oz size
    3 fresh oregano leaves finely chopped
    3-4 fresh parsley leaves or 1 tbsp dried
    I small cube of sugar or sprinkle of sugar
    Pepper to taste
    (can add spring of fresh thyme if like)

Tips

can add water if too thick, I also add some cooked and sometimes breaded chicken to the sauce at the last 10 minutes of cooking for more protein.


Directions

Sautee freshly minced garlic cloves, add chopped onion (yellow is good), bell pepper and mushrooms and herbs.
Touch of red wine then sundried tomatoes and fresh tomatoes
simmer on low heat for approximatly 30 minutes
