Ingredients

    12 oz Atlantic Salmon (fish)
    2 tsp Chef Paul Magic Salmon seasoning
    4 Meijer Soft Taco Size Flour Tortillas
    1 Avacado
    1/4 cup Oikos Organic Greek Yogurt
    2 tbsp fresh minced Cilantro
    Salt to taste (for the guacamole)
    1 Lime wedge
    1 Roma tomato diced
    1 c shredded ice berg lettuce
    1/2 c Red union diced

Directions

Guacamole:
Mash the avacado with a fork, mix in the cilantro, greek yogurt and juice from 1 lime wedge. Add salt to taste.

Salmon:
Coat generously with Chef Paul Magic Salmon seasoning, and grill until cooked through.

Tacos:
Use a fork to shred the salmon. Assemble tacos with quacamole, salmon, lettuce, onion and tomatos.

Serving Size: Makes 4 Tacos, serving size is 1 taco
