Introduction

I needed a very veggie packed meal and the other sloppy joes' were just not showing up. This is a non sweet version of the classic, but much better for you! Number of Servings: 6

Ingredients

    Ground beef, lean, 16 oz
    Onions, raw, .5 cup, chopped
    *Peppers, sweet, red, fresh, .5 cup, chopped
    Mushrooms, fresh, 2 medium
    Spinach, fresh, 2 cup, stems removed
    Tomato Paste, 0.5 cup
    Stewed Tomatoes, 1 cup
    Garlic, 2 clove
    *Worchestershire Sauce, 3 tsp

Tips

Try shredding in carrots or zucchini. Mix in some precooked beans for some added fiber and protein.

Top with sprouts, cucumber, lettuce or even corn


Directions

1. In a little oil, and on medium saute onions, garlic and bell peppers until tender. Add beef, Worcestershire sauce and seasonings of your choice; cook until brown and crumbled. Drain off fat.

2. Add mushrooms and cook for 2 minutes. Add spinach and combine until fully wilted.

3. Mix tomatoes and paste, turn temperature to low and let simmer 10 minutes.

Serve on a whole wheat bun with sweet potato fries and fresh fruit salad. (bun and sides are not included in nutritional calculation)
