Introduction

Basic Stroganoff, with extra veggies, over rice instead of standard egg noodles. Replacing the regular sour cream with fat free greek yogurt also gives you an extra shot of additional protein. Ingredients

    1 lb beef, cubed into 1" cubes
    1 1/2 C Chopped/Sliced Mushrooms
    1/2 C Onion, chopped
    1 1/2 Large Yellow Peppers, slices into strips
    3/4 C Water
    1/2 Package of McCormick's Beef Stroganoff Seasoning
    1/2 C Frozen Peas
    1 C 0% Fat Greek Yogurt
    1 C White, Long Grain Rice
    2 1/4 C Beef Stock
    1/2 Tablespoon Unsalted Butter

Directions

Cube beef into 1" chunks. Sear on high heat on all sides. Place beef in slowcooker. Add mushrooms, pepper strips, and onion. Mix 1/2 packet of seasoning mix with 3/4 C water. Pour over ingredients in the slow cooker. Cook 4 hours on low or 6-8 on high. In last 10-15 mins of cooking, stir in the frozen peas and cup of greek yogurt.
Heat the beef stock and butter to a boil. Add rice, stir and cover to cook on low 10-15 mins.
Serve one cup of stroganoff over 1/2 C Rice per serving.
