Introduction

Grain free muffins (cupcakes). High fiber, low sugar. Grain free muffins (cupcakes). High fiber, low sugar.

Ingredients

    Mix:
    5 eggs
    1 tsp vanilla extract
    1/8 tsp salt
    2 T maple syrup
    3/4 tsp liquid vanilla stevia
    1/2 tsp baking powder

    Add:
    2 T almond flour
    6 T coconut flour
    6 T coconut oil (or butter)


Directions

Blend well, until all lumps are gone (hand mixer on high). Fill greased mini muffin pan cups 3/4 full (one heaping Tbsp in each). Smooth out batter (it will be thick). Bake at 400 degrees for 10 minutes.

    Very Good
    The texture of these are light and fluffy, they dont rise much and i didnt have liquid stevia so i added more mapel syrup, i think i might add some splenda next time, made a simple creme cheese frosting, I will definetly make them again.
