Introduction

Ingredients

    2 chicken breasts
    10 cups chicken broth (add water as needed)
    2 cups noodles
    1 cup sliced carrots
    1/2 package of frozen spinach with juice squeezed out
    1 T. olive oil
    1 large onion chopped fine
    1 t. chopped garlic

Directions

Chop the carrots, onions, celery and garlic and saute them in the olive oil, adding the garlic last so that it doesn't burn. Add the white wine and deglaze the pan, scraping up any browned bits on the bottom. Cook until the wine has almost evaporated. Add the chicken stock and the chicken breasts. Now defrost the spinach in the microwave. Using a dish towel, squeeze out any excess liquid from the spinach(you can skip this step, but it will turn your soup green!) Put the spinach into the soup. Simmer until chicken breasts have cooked through. Remove the chicken breasts and dice them into chunks. Return to the pot. Add a little italian seasoning to boost the flavor if you'd like.
