Introduction

Rice you don't have to feel guilty about. This a great way to use the stems and stalks of broccoli and cauliflower. I use this in place of rice with Asian & Mexican meals. Ingredients

    1/2 head cauliflower, grated (about 2 cups)
    1 zucchini or yellow (summer) squash, grated (about 1 cup)
    2 broccoli stalks, grated (about 1 cup)
    1 cup carrots, grated

Directions

Place all veggies in a microwave safe bowl and cover tightly. Cook for 5 minutes on high to steam the "rice".

Serve in place of rice.

Serving Size: Makes 6 - 1 (generous) cup servings
