Introduction

Number of Servings: 3

Ingredients

    1 tbsp olive oil
    2 tbsp red curry paste
    1 chicken breast, cubed

    4 cups chicken stock
    1 can light coconut milk
    1 medium zucchini, cut in matchsticks
    1 large bell pepper, cut in strips

    1 400gm package noodle (I use shanghai, but use your preference)

    handful thai basil leaves, chopped

Directions

Heat oil, fry curry paste. Add chicken, stir fry until cooked. Add stock, coconut milk and vegetables. Bring to a boil. Add noodles, boil until heated through.

Add chopped basil and serve.

Serving Size: Makes 3 big bowls of soup
