Ingredients

    1 Package Frozen Broccoli
    1 Package Frozen Cauliflower
    1 Package Gimme Lean Sausage Style
    1 Package Ore Ida Hash Browns
    1 Can Black Beans
    1 Package Frozen Edamame
    2 T Cinnamon
    2 T Nutmeg
    Salt to Taste
    Pepper to Taste
    2 T Olive Oil
    30 Whole Wheat Tortillas
    2 Packages Shredded Cheese

Tips

Great recipe to make ahead. Breakfast can be made in less than 5 minutes.


Directions

Breakfast mix to be made ahead:
1. Steam broccoli, cauliflower, and edamame until tender.
2. Brown hash browns with 1T olive oil according to package. Add cinnamon and nutmeg to season while cooking.
3. Slice and brown "sausage" with 1T olive oil shredding sausage as it browns. Add cinnamon and nutmeg to season while cooking.
4. Mix cooked broccoli, cauliflower, edamame, hash browns, and black beans together. Freeze half for later and refrigerate other half to use.
Burrito Preparation:
1. Microwave 1 tortilla for ~15s to warm
2. Microwave 2T breakfast mix with ~1T cheese on top in small container for ~60s to warm and melt cheese.
3. Add mix to burrito with hot sauce to taste and enjoy.
