Ingredients

    1/4 cup rolled oats
    2 tbsp fiber one original cereal
    1 tbsp vanilla sun warrior rice protein powder (raw)
    1/4 cup canned pure pumpkin
    1/4 cup water (or nondairy milk of choice)
    1/4 tsp + extra ginger
    a few shakes cinnamon
    2 packets stevia
    1/4 tsp vanilla

Directions

Preheat oven to 375F.
In a small bowl combine all ingredients and stir well to mix.
Transfer to nonstick-sprayed small baking dish (such as mini loaf pan), sprinkle with some extra ginger, and bake for 20 minutes. When done, broil for an additional 3. Let cool slightly before transferring to plate to eat.
