Introduction

Ingredients

1 serving - angel hair pasta (2 oz. dry)
5 - large raw shrimp (about 2 oz.)
2 tbsp.- medium chunky salsa
0.25 cup - marinara sauce
1 oz. - pinot grigio white wine
20 grams - chopped orange or red bell pepper
2 tbsp. - minced shallot
0.5 tsp. - olive oil
pinch - kosher salt (to taste)
pinch - fresh black pepper (to taste)
pinch - chipotle chili pepper (to taste)
pinch - crushed red pepper (to taste)
juice from 1 lime wedge
Directions
Fill up a medium sized saucepan with water for pasta. Turn water on high heat. When boiling, add a pinch of salt and the angel hair pasta.
While you're waiting for the water to boil...
put a small non-stick frying pan on medium heat. Add olive oil to pan. When pan is heated, add minced shallot and chopped bell pepper. Cook until the pepper starts to soften and the shallot has a little bit of color. Add pinot grigio, marinara, salsa, salt, pepper, lime juice, crushed red pepper and chipotle chili pepper. Then add about an ounce of water and let it simmer, uncovered, to reduce and concentrate the flavors.
When pasta has only about 2 minutes left to cook, add raw shrimp to the sauce. They don't take very long -- don't overcook!
Once pasta is done, drain, plate and top with your sauce.
Another little squeeze of lime does nicely to finish off this plate. Enjoy!
